Soft prunes

PRUNORTIS - soft, supple and aromatic prunes.

The orchards have been cultivated for several generations according to the principles of reasoned agriculture, taking account of the seasons and weather conditions.

Care is based in particular on mechanical weeding and annual winter pruning, with no irrigation.

The productive life of a plum tree is around forty years. A young tree generally begins producing from its seventh year.

Between mid-August and mid-September, fresh plums are harvested and dried the same day. Slow drying is carried out at moderate temperature: at least twelve hours at 80°C.

The prunes retain around 35% humidity. They therefore keep all the flavour and smoothness of the fresh plum, enriched by a natural caramel aroma produced by the fruit's sugars.

Glass-jar packing and pasteurisation are carried out as the fruit leaves the oven, less than seventy-two hours after harvest.
